Preheat oven to 350°F (175°C).
Cream butter, sugar, and brown sugar until light and fluffy. Add egg and vanilla extract.
Mix in pistachio paste.
Combine flour, baking powder, and salt in a separate bowl, then gradually add to the wet mixture.
Fold in chopped pistachios.
Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Bake for 10-12 minutes or until edges are lightly golden.
